the first dessert I baked for my then-fiance was red velvet cake, and he was hooked...I love to cook, and my 3 daughters are following in my footsteps. This is a collection of recipes that we love. Feel free to comment - good, bad, indifferent - if you try any, let me know how they turn out.

Mint Brownies (with Andes Mints on top)

This is a combination of a few recipes; the main part comes from a Nestle cookbook (copied from a friend's house and I forgot to write down the title).

1 1/4 cup all purpose flour
1/2 tsp. baking soda
1/4 tsp. salt
3/4 cup sugar
1/2 cup butter
2 tbsp. water
1 1/2 cups chocolate chips, divided
1/2 - 1 tsp. peppermint extract
1/2 tsp. vanilla
2 eggs
Andes mints, unwrapped

Preheat oven to 350*; grease 9x9 inch pan. Microwave sugar, butter and water in a large, microwave-safe bowl until boiling. Stir in 1 cup chips and extracts - stir until melted. Add eggs, 1 at a time until well blended. Add dry ingredients and remaining chips. Bake 20-30 minutes. Remove from oven; cover with Andes mints. Wait 5 minutes, and swirl candies with knife. Let cool completely, and cut into bars.

    I was at my cooking school class recently, and the chef was talking about adding "Andy's mints" to her chocolate chip cookies, and I kept thinking, "I've never heard of Andy's mints". I told my dear husband at home what she'd said, and he said, "Noooooooo, ANDES mints". And the puzzle piece in my brain went "click" "Ooooooooohhh!!!!"
