My husband uses this spice mixture to rub on chicken before roasting, and then adds it to the gumbo broth itself:
1 tbsp. onion powder
2 tbsp. garlic powder
1 tbsp. oregano
1 tbsp. basil
1/2 tbsp thyme leaves
1/2 tbsp. black pepper
1/2 tbsp. white pepper
1/2 tbsp. cayenne pepper
1/2 tbsp. celery seed
2 1/2 tbsp. sweet paprika
Combine in food processor and pulse until well-blended, or mix thoroughly in large bowl.
*tip: you can buy small quantities of spices from a health-food or bulk-foods store.
